Peach Crunch Cobbler...

Several years ago I was watching the cooking channel on TV and heard Paula Deen talking about easy, go to recipes....right up my alley! I love to bake, especially when the recipe is quick, easy to put together, and has ingredients that I usually have on hand. Of course, the most important thing is that it tastes delicious!

Recipes like these are great for weekends at the cabin or on a boat or in a camper! As long as you have an oven,  you are good to go! I was visiting my aunt and uncle in Wisconsin and a few of my cousins were coming to join us for dinner. Aunt Con asked, "Do you know a quick dessert we could make?" Peach Crunch Cobbler immediately came to mind! We made a quick trip to the market for the ingredients and put it together...and it was a hit! So, this past summer when I was there again, Aunt Con said some friends had brought over some lovely peaches...and one of her grandsons had requested my Peach Crunch Cobbler. I had never made it with fresh peaches before, but I put it together and it turned out wonderfully.  

As fall approaches and you need an easy dessert, topped with a scoop of vanilla ice cream, I highly recommend trying this one....or this one. You can't go wrong with either one! ( I did modify the peach recipe by adding a little oatmeal to the topping).

Peach Crunch Cobbler

24.5 ounce jar or 29 ounce can slices peaches with syrup

1 yellow cake mix

1 to 1 1/2 sticks butter, sliced into squares

1 cup brown sugar

1 cup chopped nuts (walnuts or pecans)

1/2 cup old fashioned oatmeal

Preheat oven to 350 degrees. Mix the brown sugar, nuts, and oatmeal together. Layer the the peaches, then cake mix, then butter, then topping. Bake for 40 to 45 minutes. Serve warm or cold, with a scoop of vanilla ice cream. Bon Appetit!

I just baked Peach Crunch Cobbler for my husband's birthday over the weekend. We were so happy to be able to share it as part of a quick last meal with our pastor, Mark, his wife Lori, and several of their family members as they drove through Plain to pick up a bed my builder guy had custom made for them on their way to North Dakota.  Hard to see them go, but we know we will see them again.
